I feel as if in every post, i mention something along the lines of neglect. Well, i've done it again, i've neglected my blog to live my fabulous life. Fabulous as in cleaning up runny noses, cooking and cleaning, walking dogs, working, chasing kids around, chasing dog around, working, you catch my drift. Anywho, A lot has been going on in my life since the last deserted, lonely, post. So, for my first post, we shall talk about MY ENGAGEMENT! HELLLLOOOOO. Michael and I have been dating for over a year now, and I guess the cool new thing is "if you like it, put a ring on it" or maybe not, I just jacked Beyonce's shit for  a second. It came as a complete surprise to me, and I couldn't be any happier. Or is it the other way around? He should be happy I said yes. I'm a damn good woman. (tooting own horn). If you follow me and actually like me, Stay tuned as I plan a wedding. An event in which I am completely CLUELESS.

I've found true love

It feels like only yesterday that I gave birth to these two beautiful little ladies. Now, I sit back and watch them, watch how they grow, how they talk, how they each have their own individual personalities. I couldn't be any prouder to have them as my kids, and I can only hope one day they realize all that I do to make sure they have a safe, happy and secure life.

life's a beach and we're playing in le sand

Saturday, on my one and only day off, we took a road trip to Ormond Beach. Ok..not much of a roadtrip since it's barely an hr away lol, but it was  a much needed trip. We played in the sand, swam with the fishys and I almost drowned, no exaggeration. My life flashed in front of me and everything. I need to take it out of my head, i'm not a big macho surfer and I CAN'T take on the big waves with just a boogie board after all...I don't usually bring my rinky dink phone with me out on the beach, but I did this one time. I can't get K to stand still for a picture when she's playing, but I did capture this one picture of Lee..I enjoyed it so much that i'd figure i'd share with ya'll..

Happy Birthday

May 25th was my 24th Bday...24..wow. I'm getting there. I worked on my actual bday, so I celebrated afterwards with my sister at the Tilted Kilt, excellent place btw. The day after was my big celebration. A few buddies, bf, and I went to a bar and played darts (which is a new hobby for me) and drank till our hearts content. It took me a good hour or so before I realized the bar we went to was basically for old rednecks lol, but who the hell cares? The drinks were good so fook it.

 Those cupcakes are from a little place called Sweet Cakes. It's been a long time coming, but a cupcake shop has FINALLY opened up in town, and I couldn't be any happier. One is a Reese PB cup cupcake and the one next to that is an oreo one! yum! There was a red velvet one, but I ate it before I snapped the picture lol. My co workers got them for me and surprised me when I walked into the building. Sweet huh?
My outfit for the night, I wasn't too crazy about it. The belt kept sliding down, but I accepted it and ended up liking it..eventually..IN LOVE with the skirt though.

Yum yum yum in my tummy

Elloo puppets! This past Tuesday was my day off, so I decided to cook dinner for the family and myself.  I'm very fond of Rachael Ray and her snazzy 30 minute meals, so i ended up making her Chicken Vesuvio. A simple chicken, potato and peas dinner. Here are the things you'll need

2 lbs boneless chicken breast, cubed in large chunks
1/2 cup of frozen peas
2 baking potatoes peeled and sliced 1/4 inch thick
6 cloves garlic, thinly sliced
1/3-1/2 cup of extra virgin olive oil 
1 tsp dried oregano lightly crushed
salt and pepper
flour to coat your chicken
1/2 cup dry white wine ( I used Sauvignon blanc)
1/4 cup chicken stock
1/4 cup finely chopped parsley

Preheat your oven to about 375. While waiting heat up 1/4 cup of oil in a large skillet, add the taters  and garlic, season with the oregano and lots of salt and pepper. Cook and turn occasionally until it's brown. The recipe calls for about 15 minutes, but my skillet cooked it in 10. Every one is different though. Meanwhile, in an ovenproof skillet, heat up a couple TBSP of the oil over medium high heat. Season the chicken, liberally, with salt and pepper then coat the chicken in some flour. Cook the chicken until a golden color on each side, about 5 minutes. Add the wine and stock to deglaze the pan. Yumm. Who doesn't love cooking with wine? Stir in those cute little peas! 
take the skillet with the potatoes and garlic and add that to your chicken skillet. Place in the oven for about 10-15 and top with the parsley.

I made a side of cheesy parmesan alfredo bowtie pasta, and also made some garlic bread. It was a big hit! Not even a bite leftover! I'm proud of myself and thankful for Ms RR! Oh, and VERY happy for the wine, that gets me through cooking lol.



For Dessert, I took the lazier path. Poundcake topped with coolwhip (insert family guy joke here),  strawberries and chocolate syrup. Everyone ate all of that up too..I even bought some more ingredients for it the next day, and took it into work for some co workers. I guess it made their night :)

Spotlight on fluffiness..


Meet Zoe. Zoe is a 3 legged Siberian Husky. She was hit by a car and the damage to her leg was beyond repair, so they had to amputate it. She's a rescue dog, the owner abandoned her after she was hit and my professor at the time adopted her. He didn't have the time to take care of ger so I took over. Don't let the handicap fool you though, she runs faster then any 4 legged dog i've ever had the pleasure of meeting. One day she got out and it took me almost two hours to catch her because she was just too damn fast. She is VERY vocal, not only barks whenever she wants attention(which can be annoying lol) but she also talks, not human talk obviously. She likes to talk back whenever you're playing with her..or telling her NO! There are times when she drives me up the wall, but I couldn't picture my life now without her. Did some Christmas shopping with my sisters the other day. I figured getting everything out of the way earlier is the way to go. I don't want to be a last minute shopper. I found almost everything I needed, everything else can be ordered online lol! Afterwards, my dad decided to treat the family to good ol Steak and Shake. Love that place...well just the milkshakes! show your PRIDE..

Hola!! Last week, a few buddies and I went to Downtown Orlando for PRIDE. The drinks were flowing and the people were the best! I met some beautiful ladies too. I'm a curious gal ;)

I'll be in the beyond section, ask for me!

I am SO excited to tell everyone the great news! I GOT A NEW JOBBY JOB! I haven't worked in a very long time, was too busy with school and taking care of the kids, but since i'm still working on getting my boards, I needed a part time job and FAST! While shopping at Bed Bath & Beyond, I bumped into my old manager who's now working at the BB&B closer to my house. I asked him if they were willing to re-hire me, since I worked there before I had Kaley, and two days later i'm hired! I'm ecstatic! I know it's nothing too fancy, but it will definitely help pay the bills. I went from having no license, no high school diploma and no job to having all of that in just a matter of months! I guess when you really set your mind to something, things start to happen. This couldn't have come at a better time since Christmas is just around the corner. Maybe by next year i'll have my own place :)

How was everyone's Halloween? Did you get tons of candy? I know we sure as hell did. 3 big ol bags that'll probably last for a few weeks..who am I kidding? The chocolate is almost gone lol! Let's get right into my post. As you can see, my costume was the Black Swan. Awesome movie. Awesome costume! The best part is that I put it together myself. All I had to buy was the makeup, feathers, gems, and tutu. I think it's so much fun making your own costume. Shows creativity!


The Saturday before Halloween, my sister and I decided to get together with a bunch of friends to celebrate in Downtown Orlando. It was a very good night. Even though we left earlier then expected. Nina's feet hurt lol.

Oh, she's preeetttyyy

I tried my hand at yet another outfit, not too sure how I really liked this one, but I still felt like a million bucks..Especially since while I was at the grocery store, an 8 yr old girl called me beautiful and pretty. Then kept telling her mom how pretty my shoes were. Even though the compliment was from a litttle girl, I still felt good about it. Making 8 yr olds envious one day at a time..ohh yeaahh ;)

What's cookin', good lookin'?



The other night, I wanted to make a cheap, easy, quick dinner for the family and myself. I figured you can never go wrong with Chicken and Steak Quesadillas with a side of spanish rice, black beans and corn! Yum!!
First get all your ingredients together. Since I wanted a quick way to make this, I bought already cooked chicken and steak strips and instant spanish rice. You'll also need: 1 green pepper, 1 onion, flour tortillas, can of black beans, and mexican blend shredded cheese. Oh, and a tomato :)
Now, chop up the onion, tomato, and green pepper
While you're chopping away, start to cook the chicken and steak strips in saute pans over medium heat. Also, there's not a picture here, but cook the rice according to the package, and put the black beans in a sauce pan, season with whatever you like (I used adobo, garlic powder and a bit of pepper) and let warm up for at least 10 minutes.
When that's all done, take a torilla, add cheese, peppers, onion, meat and tomato, top with another tortilla and cook in pan on medium-high heat. Flip the quesadilla after 3-5 minutes to cook other side. Remove from heat and repeat with others.

Serve with the rice, corn and black beans and VOILA! yummmmaayyyy! If you're like me, I eventually mixed my rice with the beans and corn. As you can see, I was running low on tortillas so i used one tortilla and made it kind of like what you would do with an omelet. Lastly, SHOVE YOUR FACE! EMBRACE YOUR INNER FOOD LOVER!

I HAVE BEEN TAGGED!!

One of my loves, and fellow blogger, tagged me in a 7 things about you thingy mabob. So here I go. Even though I feel 7 is not enough lol!

1. You may not be able to tell from my pictures, but i'm hispanic. Both my parents, grandparents, and so on are from Puerto Rico. The sad part of this is I don't speak spanish very well. Un poquito. See I'm not even sure if I spelled that right! That's okay though, i'm slowly teaching myself and telling myself that my parents just didn't want us to know what they were talking about, so English it was.

2. I tend to be a geek at times. I'm into a lot of Sci fi and paranormal stuff. I'm a HUGE fan of Star Wars and I think every creak and bump in the night is a ghost lol.

3. I'm a Gemini :) I don't understand how most people refuse to believe astronomy. My sign pretty much fits me perfectly. Some believe the Gemini is two faced, NO. To me it means split personalities. My mood swings are no joke. Lord have mercy!

4. Religion is a very iffy subject to me. I do have faith and believe in a higher power, but i'm not sure WHAT or WHO that higher power is. I also believe that prayer is strong, but to me it's more of a comfort thing. I'm just not sure what really is going to happen when we die. Do we reach the pearly gates of heaven or do we simply evolve into something better?? At times, I question it and tend to lean more on the science side of things.

5.When I decided to go back to school, I went down the medical field path. Don't get me wrong, it was good choice, but sometimes I wish I could go to culinary school. I love to cook and try to liven up recipes, and I love baking ESPECIALLY anything chocolate lol. There is something joyful about being in the kitchen and creating a wonderful meal for the family. Even a meal for yourself :)

6. I have two little girls who make my world go round. I couldn't ever picture my life without them. On my worst days, they have this ability to shine a light on it and make it better. The more they grow, the more I see myself in them. K is a tomboy and likes the things I like, and even has the same temper. Lee has this "i'm a princess" demeanor about her, and I can't help but see my girly side come out in her. Like all children, they have their days..and for all you mothers, you know what "days" i'm talking about lol, but it doesn't make me love them any less. It just builds me up to be a better mother.

7. I am an ANIMAL LOVER!!! I have a 3 legged Siberian Husky, who I treat like she's my child. She can be a pain in the booty, and sometimes I feel like putting her on "bad dog" on Animal Planet, but I could never get rid of her. I didn't rescue her, she rescued me. IDK I feel as if dogs have this ability to sense their masters feelings, and she has been a very loving dog on the nights where i'd cry myself to sleep.

Had a little shopping day with my little sister, and decided to wear something that I feel is more my style. It was raining..of course..all day..again, So I didn't want to do it up too much. I did realise today that I LOVE driving with heels on...I can reach the pedals better lol!

Good Morning! It's such a rainy crappy day today. I'm debating if I even want to venture out in it. If I do, i'm definitely not even going to dress up. But, just a quick little post on some things I bought not too long ago, and wanted to share with you :)

I needed a lotion that was going to really moisturize my skin and that was affordable. Vaseline total moisture conditioning lotion is an ok product. Isn't my favorite, but it gets the job done. I recently got all my dead ends chopped off and am focused on keeping my hair as healthy as possible. Since I straighten my hair alot (which is a big cause to hair destruction) I bought Frizz Ease straight fixation. It works great and smells good too! Last but definitely not least is a product for my natural curly hair. Normally, I just use mouse, but it tends to leave my hair hard and crispy which is something I HATE! Curly Sexy Hair curling creme is awesome. It smells good, and just a little bit helps maintain the frizz and keep the curls in tact. Was a little bit on the pricey side, but it's worth it.
